Haskap Berry Scones

Can you say easy and delicious? These are perfect with your morning coffee or tuck them into your kids lunches.

  • 2 cups of white flour
  • 1/2 cup of granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup of diced margarine or butter
  • 1/2 cup of milk
  • 1 egg
  • 1 1/2 teaspoon of vanilla extract
  • 1 cup of haskap berries
  • side of sugar to sprinkle on top

Instructions:

  1. Combine and mix the dry ingredients, flour, salt, baking powder, cinnamon, and sugar.
  2. Slice in the diced margarine.
  3. Mix together the egg, milk, and vanilla extract; add this blend to the dry ingredients and mix up till you have a nice dough.
  4. Fold in the haskap berries.
  5. Line a low pan with parchment paper or grease it with butter.
  6. Scoop the scone dough into to palm sized amounts onto the pan.
  7. Sprinkle the tops with sugar.
  8. Cook in a pre heated 400F oven for 20-25 mins.
  9. Enjoy!
