Cinnamon Haskap Crepes

Cinnamon Haskap Crepes

These amazing and simple crepes will always keep them coming home for more. This recipe makes 6-7 crepes.

Ingredients:

  • 2 eggs
  • 1 cup of flour
  • Pinch of salt
  • 2/3 teaspoon of cinnamon
  • 1 1/4 Milk
  • 2 tablespoons of vegetable oil
  • butter for the pan
  • 1.5 to 2 cups of haskap berries
  • Cool whip or whipping cream
  • Icing sugar to sprinkle on top

Instructions:

Step 1. Whisk the eggs in a bowl.

Step 2. Whisk in the flour, salt, cinnamon, milk and oil. Make it the consistency of heavy cream.

Step 3. In a 9″ frying pan, melt enough butter to coat the pan over medium heat.

Step 4. Pour in just enough crepe mix to cover the bottom of the pan. Swirl the pan to shift the mix around to the edges.

Step 5. Cook for about 1.5 to 2 mins, if the top looks dry it’s time to flip it over and cook for another minute. Repeat steps 4 and 5 and stack the crepes on a plate.

Step 6. Take an open crepe, spread some cool whip inside, add some haskap berries, roll it up. Add a dollop of cool whip on top and a berry. Sprinkle some icing suger on top. Enjoy!
